Oyster Mushrooms

Oyster Mushrooms are consumed around the world and are becoming increasingly popular in the United Kingdom. They are known for their wide, flat caps with delicate pure white gills. They are called the oyster mushroom due to their caps resembling the shape of an oysters shell. The Oyster mushroom contains all of the essential amino acids needed for a healthy diet. 

Oyster has a soft bite and delicate flavour. It absorbs flavours well, which means it can easily increase the strength of a dish, making it an ideal accompaniment for fish dishes or creamy sauces. The gentle tastes of oyster mushrooms complement citrus flavours.

Oyster is easy to prepare and can be cooked whole or sliced, allowing it to be used in a variety of different dishes. As well as being fried it can be baked or boiled in soups and sauces.

Our oyster can be purchased from Waitrose, Sainsburys and ASDA packed on its own or in mixes packs. It is also sold loose in Morrisons stores as well as in our on site farm shop, The Mushroom Basket.

Enoki mushrooms are recognized by their long, thin stems and small pinhead caps. Livesey Bros grow both White Enoki and Golden Enoki. They are often referred to as the “winter mushroom”. However, this is not due to the White Enoki’s snow like colouring, but because Enoki thrives during the colder months and grows at temperatures as low as one or two degrees.

Enoki mushrooms, when cooked, has a noodle like consistency, becoming soft and string like. This is ideal for those who are gluten intolerant or cutting down on carbohydrate consumption. Put Enoki in a noodle free stir fry and you will barely notice the difference – and probably feel better for it!!

Due to its sweet flavour, Enoki mushrooms taste great in salads, such as our Pomegranate & Enoki salad recipe. The Enoki’s sweetness and delicate flavours also complement fish and meat dishes.

Enoki is very simple to cook, simply remove the base and flash fry for 30 seconds or blanche in boiling water.

Enoki & Golden Enoki Mushrooms

Enoki mushrooms can be found in various mixed packs and single packs in Sainsburys and ASDA. Waitrose also have a stir fry pack that sometimes contains Enoki. It can also be found in our on site farm shop, The Mushroom Basket.

How to prepare Enoki Mushrooms

You Will Need

Livesey Bros Enoki or Golden Enoki 

600ml of water

Pan

Sieve

Wooden Spoon

Salt and Pepper

Chopping Board

Knife

Hob, Gas or Electric

Instructions

  1. Place the pan on the hob. Add the water and bring to the boil.

  2. Whilst the water is boiling, remove the base of the Enoki (about 2 cms) using a sharp knife.

  3. Seperate the Enoki strands with your fingers.

  4. Once the water is boiled, add the Enoki to the water.

  5. Cook for thirty seconds, stirring occasionally.

  6. Remove the pan from the heat and drain using a sieve.

  7. Season with salt and pepper and serve
