Garlic Woodland Mushrooms on toast

Garlic woodland mushrooms on toast is a delicious dish to start your day. Packed full of wonderful mushroom flavours is a extremely tasty and will keep you going throughout the morning. Tim Livesey who has been growing woodland mushrooms for nearly 30 years has mushrooms on toast for his breakfast everyday!! If you love eggs you can also add a yummy runny fried egg to this dish!

Ingredients – serves 1

150g woodland mushroom pack

1 clove of crushed garlic

2 slices of brown whole bread

parmesan

1 egg optional

Butter

Olive oil

salt & pepper to season

Method

  1. Destalk the woodland mushrooms. Add a knob of butter into a large saucepan on a high heat. Once melted place the mushrooms and crushed garlic into the pan. Stir occasionally for 4-5minutes of until they start to turn golden.

  2. Place a separate frying pan onto a medium heat, add enough olive oil to cover the surface of the pan. Crack the egg into the pan, as the oil gets hotter the egg will begin to colour and cook. Leave to cook for about 1-2minutes depending on how you prefer your egg.

  3. Toast your bread until golden and butter.

  4. To Serve place your delicious woodland mushrooms on toast with a gooey fried egg. Lightly season with salt and pepper, and grated parmesan.
