Maitake Mushroom and Turmeric Latte
For this recipe, registered nutritional therapist, Eva Humphries of Whole Food Warrior,
blended fresh maitake mushroom into a latte that is sure to kick any winter cold.
The Japanese word “maitake” translate simply to “dancers”. It is thought that the discovery of this woodland mushroom lead to dancing with delight, and from that day, maitake has been known as the “dancing mushroom”.
Amongst it’s many culinary uses, maitake mushrooms have recently become a popular ingredient in superfood powders thanks to it’s immune boosting properties.
Yes, it may be a slightly out of the ordinary use for a mushroom, but the combination of sweetness and spice balances the maitake beautifully, creating a creamy latte that is a joy to drink.
Maitake Mushroom & Turmeric Latte
Ingredients - serves 2
20g maitake mushroom
1/2 teaspoon turmeric
1/2 teaspoon cinnamon powder
1 tablespoon of maple syrup
2x slices of fresh root ginger
350ml unsweetened almond, rice or oat milk
Method:
Put all of the ingredients in a blender or smoothie maker and blend until completely smooth (approximately 1 minute).
Transfer the liquid to a small saucepan and heat up gently.
Take it off the heat at or just before the point of boil.
Divide between two cups and enjoy hot.
