Woodland Mushroom Minestrone Soup

Our Woodland Mushroom Minestrone Soup is a delicious autumnal meal, perfect for the colder evenings. Its a great one pot wonder and can be made in less than 30minutes.

Ingredients - Serves 4

3 packs of 150g of mixed woodland mushrooms (buy here)

2 large carrots, chopped into small pieces 1 large onion, chopped into small pieces 2 celery sticks, chopped into small pieces 1 tbsp olive oil 1 litre vegetable stock 200g can chopped tomatoes with garlic 200g can butterbeans 100g Soup pasta 2 Handfuls of shredded kale Crusty bread, to serve

Method

  1. Prepare the woodland mushrooms (for gudinelines on preparing our mushrooms please click here), add to a medium hot pan, fry until golden. Chop the carrots, onion and celery into small pieces and add to the pan along with the mushrooms, cook for about 5 minutes.

  2. Stir in the tomatoes and stock bring to the boil and add the butterbeans and pasta. Cook until the pasta is just tender.

  3. For the final few minutes of cooking the shreaded kale and season to taste.

  4. Serve into to bowls and enjoy with some crusty bread!
