Woodland Mushroom Christmas Tarts

Christmas starters or nibbles can always be a tricky one, and trying to please everyone on Christmas day can isn't always easy. So why not try something different with our super delicious and festive woodland mushroom Christmas tarts. This recipe serves 12 so is a perfect entree or nibble for the family, before tucking into your feast of a Christmas dinner. Additionally they can be a great canapé at a Christmas drinks party. Ingredients - Serves 12

1 200g Punnet of Mixed Woodland Mushrooms (buy here)

320g Ready rolled puff pastry

2 Cloves of garlic, grated

1 Tbsp Olive oil

25ml White wine

100ml Crème fraiche

3 Sprigs of thyme

Method

  1. Pre-heat the oven to 200â—¦c. Roll the pastry to the thickness of a pound coin. Take a star cutter (or any festive themed cutter) and press down firmly in the pastry. Using two pastry sheets you should be able to get around 12 tarts.

  2. Score a 5mm boarder around the inside of the pastry shape. Take away the excess pastry and place each star on a baking tray lined with grease proof paper.

  3. Place the stars in the oven for 10 minutes until slightly golden.

  4. Meanwhile, prepare the mushrooms. Add the oil to a frying pan and fry the mushrooms until golden, grate the garlic cloves into the pan, add the thyme leaves and stir. Spoon in the crème fraiche, add some seasoning and stir.

  5. Once baked, remove the tarts from the oven, top each tart with the mushroom mixture and place back in the oven. Leave to bake for a further 10 minutes.

  6. Once cooked place each tart on a serving dish and serve as a canapé or a starter.
