Woodland Mushroom Bruschetta

Woodland Mushroom Bruschetta's make a delicious canapé, starter or nibble for any occasion, whether your having a dinner party, or just a few friends round for drinks. This quick and simple recipe makes 12 and only take 25minutes to cook and prepare.

Woodland Mushroom Bruschetta

Ingredients for Woodland Mushroom Bruschetta

Makes - 12

Prep - 15minutes

Cook - 10 minutes

1 Punnet of Mixed Woodland Mushrooms (200g)

2 tbsp olive oil

2 garlic cloves – finely chopped

1 lemon – zest & juice

12 slices of Sourdough Bread

130g fresh pesto

Method

  1. Drizzle the Sourdough Bread with 1 tbsp of olive oil and grill on each side until golden brown. Alternatively, you can toast the Sourdough in the toaster – once toasted rub each slice with the whole clove of garlic to give a good garlicky taste

  2. Finely chop the other two cloves of garlic and prepare the Woodland Mushrooms – for details on how to prepare our Woodland Mushrooms click here.

  3. Heat a frying pan on a high heat and add the remaining oil to the pan, fry the garlic and Woodland Mushrooms until golden. Grate the lemon zest over the mushrooms and drizzle with a squeeze of lemon juice and season well. Remove from the heat

  4. Spread some pesto on each slice of Sourdough Bread and then top with the Woodland Mushrooms – sprinkle with some chopped chives (optional)

  5. Serve as a starter or canapé (best warm!)
